Potato Soup

My oldest son made this recipe for me last year while I visited him to attend his wedding in Korea.  I haven't stopped thinking about how delicious it was and recently asked him for the recipe.  Potato soup demonstrates the understanding of nutritional value, provides for an activity on a rainy day, it helps with counting, sequence, cooperation and of course gives as a healthy lunch.  As I have always said, my children are my inspiration for me in all aspects.    For the Soup:  you will need:
                   Potatoes- one per child  --counting
boil in enough water until potatoes are soft
                   saute' broccoli, onions
add to potatoes after draining water, add milk about 2 cups continue to boil approximently 15 minutes.  Serve with fish crackers, side plate of strawberries and blueberries, makes great as color vision, and taste with the comfort of knowing the children helped to make the meal together as an activity too.
